Freezer Jam… Strawberry / Blackberry

We went to check the blackberry bushes when we returned from vacation… but, not many there…
What little I did get… I decided to add to some strawberries and make freezer jam

New to me…

I knew I needed Pectin…berries and sugar

(Pectin is produced commercially as a white to light brown powder, mainly extracted from citrus fruits, and is used in food as a gelling agent particularly in jams and jellies)

How hard could it be?…

and it wasn’t!

Washed my berriesblended them just till crushed leaving bits of fruit… 2 cups

Stirred in sugar… 4 cups

Let set 10 minutes after stirring a few times…

Meantime… heated Pectin (Sure-Jell) together with 3/4 cup of water boiled for a minute…

Added to berries and sugarstirred for 3 minutes until sugar was completely dissolved…

Spooned into clean jars I had been saving

Just right for jellies and jams… Made 4 jars… leaving a little room for expansion…

Put on lids and let set for 24 hours until thick…

The taste I took from the spoon was really good…

But, tomorrow on toast will be the real test

My guys were quite impressed with my endeavors…

The only thing I did different is to put in jars

whereas they said plastic containers

I think they will freeze just fine…

and the jam/preserves can be kept in refrigerator for up to 3 weeks

I doubt that it will last that long!

  1. sounds really easy. does the pectin remain in the jam when you place in jars? does it have a taste to it? I remember Mom used to make jam but she put parafin on top, some kind of wax stuff. Do you just need two cups of fresh fruit? can you use splenda instead of real sugar? sorry bunch of questions
