I’m getting accustomed to my job… and the adults that I care for… are getting use to me too…
I hear many compliments… Even my review from the Director was very good…
We use to say…”We’re in the honeymoon time”… when we first met a new student at school… The same goes for these Seniors…
All sweet and smiling… and then you see the
“real” self come out…
Bitterness… heartache… loneliness…
Agitation… tempers… emotions…
I’ve worked a long time… so nothing actually surprises me…
Just disappoints sometimes… and my feelings go out to them…
I still feel I am in the right place… Being given true hugs… kind words... and the smiles abound…(most of the time)…
I am tired!… but, gets better every week… Over a month now…
and I do look forward to my days off like anyone who works… even if only 14 hours a week…
Being Saturday… cleaned a little… went to the store… and then came home and put together “Lasagna Soup“ … a recipe from Paula Deen off of Facebook…
Easy and simple… like I like!…
I put in crock pot… but, would be faster on top of stove… Just letting you know…
1 lb. – of ground beef… (lean)
1/2 to 3/4 – of one Chopped Onion
1/2 to 3/4 – of one chopped Green Bell Pepper
3 cloves garlic … I smashed
Brown together…
2- cans Chicken Broth
2- cans petite diced tomatoes
1- can tomato sauce
2 – tsps of Italian Seasoning
1- tbsp. of Grated Parmesan Cheese
1- tsp. salt/pepper
1- tbsp. brown sugar
Cook for about 30 minutes (simmering after coming to boil)
If using crock pot… wait until bubbly and cook about an hour…
Add:
2- cups of broken Lasagna Noodles
and cook until tender… NOT mushy!
Spoon into bowls and top with shredded Mozzarella Cheese…
YUMMY!… with Grilled Cheese
or a toasted bread of some kind…

YUMMMM! I love that it can be done in a crockpot…and grilled cheese (or cheesy garlic toast) would make the perfect side!!!
I could eat soup, salad and/or sandwiches every day, but the hubster is more a meat and taters kinda guy. I think even he would like this soup ;) Thanks for sharing, Marilyn…putting it in my file for a happy surprise!
