I finally opened my Corn Relish that I bought at the Glendale Craft Fair…

I found it to be great on hot dogs that I had grilled…

of course chopped onions, pickle relish, mustard and ketchup was added too!

Something different for my neighbor who is doing our grass/leaves…

Peanut Butter Fudge…

Easy recipe!…

2-cups sugar

1/2 cup milk

Boil for 2-1/2 minutes…

Add 1 teaspoon vanilla and 3/4 cup peanut butter… STIR!… and pour in pan quickly…

sets up in minutes and cuts perfectly after cooling!

Family just pitches in where and when they can to cover all bases…

Cookies* My Girls* SNOW

I had made these before but, had forgotten until a friend posted them on FACEBOOK…

Since tomorrow is grocery day… we were out of about everything… but, I did have the 3 Ingredients for these yummy Peanut Butter Cookies

YES!… 3 Ingredients OLYMPUS DIGITAL CAMERA

1 – Cup Peanut Butter( smooth or crunchy)

1 – Cup Sugar

1 – Egg

Mix thoroughly…

Roll by teaspoonfuls in sugar

Bake on ungreased Cookie Sheet 10-12 minutes 425 degrees…

Let sit a minute to cool before removing from baking sheet…

Makes approximately 2 – dozen

Homemade “Apple Pie”

With a couple of apples left in the fruit bowl… (a neighbor had brought us a bowl of apples, pears, kiwi, bananas, grapes, oranges, nuts and candy for Christmas)…. k0439704

I decided it’s either time for apple salad or a pieApple-Pie

Since my baking skills have been honed this Christmask6189911 … I decided on the pie…

Found a basic Apple Pie Recipe… including crust…

CRUST:

2-1/2 cups flour

1 tsp. salt

1 cup shortening ( I used Butter Flavored Crisco)

5 – 7 tbsp. ice-cold water

Combine flour , salt and shortening with hand until crumbly like cornmeal.

Add water and shape into a ball, mixing with hand.

Roll out 1/2 of dough on floured counter… Don’t play with dough very much… the less handling… the flakier the crust…(my Momma taught me that!).

Cover bottom of pie pan ( I had a disposable one left from baking ).

Apple Mixture:

6 cups apples sliced thin… tart is recommended…( about 4 apples )

I peeled mine…

3/4 cup sugar

1- tbsp. cornstarch ( I had to use flour )…

1/2 tsp. ground cinnamon

1/4 tsp. ground allspice

1- tbsp. lemon juice ( not, necessary, but keeps apples from turning brown)

Pour mixture onto bottom crust131229_001

Vent… a few slits to allow steam to come out of pie while baking…

I cut out a few stars from the leftover dough and laid on top… Used a fork to crimp edges…

Mine was a little too sweet… due to using 3 different kinds of apples…

Waffles kept calling my name… and I hoped everyone else was in the same mode… because that is what I made…

I checked in the mirror to see if I had turned blue… but, no I was just fine… but, I did have a smile on my face!…

I then decided to make a Coconut Cake for my husband… No… he doesn’t need it… but, I treat him sometimes… Oh… get real… all of the time!…

Then… that little pumpkin that I had bought was staring me in the face…

“What are you going to do with me?”, it seemed to ask…

I just decided to take all of the seeds out of it… and toast them in the oven… a little Cooking Spray… a little sprinkle of salt… and let bake until turn a light golden brown and crunchy…

I just love munching on them!…

Baked in hot oven until golden brown and crispy!

My next thought went to dinner… and I love having things done a little ahead of schedule… so, while the oven is hot in go the three stuffed peppers I have…”the last of the last” as my Mom used to say… that my daughter-in-law’s Mother had made for me this summer… She made me 24 of them to put in the freezer… “I love you Pam!”… They were so delicious and we will enjoy the last of them later today!…

I’m not finished!…

I was on a roll…

The oven was hot and I wasn’t going to waste the heat…

and actually felt good with temperatures being low and flurries in the air…

While the peppers were baking I put together a cabbage casserole recipe a lady at the YMCA told me about…

Remember… I’m a simple person… and this was a simple recipe…

Head of cabbage cut up… I like it in long pieces… and placed in a greased (Spray Pam) baking dish (8″ X 8″) … Pour a can of Cream of Chicken Soup mixed with 1/2 c. of water over the cabbage… top with bread crumbs and pats of butter…

We will see how it tastes later along with the Peppers… but, how could it be bad!…

I think my stomach is growling… from all of the wonderful smells wafting around in my kitchen… Husband says, “It smells like a delicatessen”, as he peeks into the oven… k8579335

Another Redo!

My Mom had a small table in our dining room for many years…

It was just Dad and her living together now…

and to heat the big oven was not necessary…cof0842

She had purchased what we always called an “ovenette”…

She placed it on this small table my dad had painted a pale green… and used it for many years…

The grandkids to this day remember it…

My brother had obtained it in her move from the home place…

He painted it a bright green to match the decor in his little country home he had obtained in Bethlehem, Indiana by the Ohio River

My brother has since passed and my sister-in-law was doing some changes…

I obtained the table…

As I looked at it… I could tell the top was warped from heat probably… remembering it’s

and it was covered in Veneer…

It peeled off easily due to age , the heat, and dryness of the wood…

Underneath I found it to have been burnt from years of the little oven sitting on it…

Thank goodness… no fire had ever been started…

After sanding… the top was replaced…

My husband and I replaced the veneer with a thin board… Painted it gray and red…

It kind of makes me feel happy having it there…

Pretzel Making Time!

I try to do some kind of activity with my Grandkids when they come over…

Fall break had started… and I was lucky enough to get them for a day and night…

They are quite busy… with football practice, basketball practice, school… and friends…

We had planned on making these once before but, ran out of time…

So tonight we decided we would make the pretzels from a kit I had bought…

I did happen on this neat little pan that had shapes that reminded me of “peanuts”…

Well, that’s what it looked like to me…

I just liked it… so bought it… thinking of some cute cookie shapes… or little cakes of some kind…

Then, it dawned on me!… Lightbulb moment!…

and I love Eclairs pastry… custard filling and chocolate frosting!…

Yummy!…

So, I looked up a few recipes… and these seem to be as simple as I could find…

Madeleines are very small sponge cakes with a distinctive shell-like shape acquired from

being baked in pans with shell-shaped depressions.

 Madeleins

Specialty tools: Two 12-cavity Madeleine pans

Preparation time: 15 minutes

Baking time: 10 minutes

Yield: 2 dozen

4 eggs

1/4 teaspoon salt

2/3 cup sugar

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup (1 stick) unsalted butter, melted and cooled

1 teaspoon lemon zest, finely minced

  1. Preheat the oven to 400 degrees. Spray the cavities of two 12-cavity Madeleine pans with nonstick cooking spray and set aside briefly.
  2. Using a mixer, beat the eggs with the salt in a large mixing bowl until they’re foamy.

Gradually add the sugar and whip the mixture at medium-high speed for about 5 minutes, until the mixture is pale colored and holds a slowly dissolving ribbon when the beater is lifted. Add the vanilla extract and blend in well.

  1. Fold the flour into the mixture in three stages. Fold in the melted butter in three stages. Blend in the lemon zest.
  2. Transfer the mixture to a 2-cup liquid measuring cup. Pour the batter into each cavity of the pans, filling three-fourths full.
  3. Place the pans on baking sheets. Bake for 10 minutes, until the Madeleine’s are golden and spring back when touched. Remove the cookie sheets from the oven and turn the Madeleine pans upside down on cooling racks.

Gently shake the pans to remove the cookies. Cool completely on the racks. Store in an airtight container at room temperature for up to 3 days or freeze for longer storage.

Eclairs

Serves: 10

What You’ll Need:

  • 1 cup water
  • 1/2 cup (1 stick) butter, cut into quarters
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 eggs, at room temperature
  • 2 cups (1      pint) heavy cream
  • 1 (4-serving)      package instant vanilla pudding and pie filling
  • 1 1/2 cups confectioners’      sugar
  • 3 tablespoons unsweetened      cocoa
  • 2 tablespoons milk
What To Do:
  1. Preheat oven to 400 degree F. In a medium saucepan, bring water, butter, and  salt to a boil over medium-high heat. Add flour all at once and stir quickly  with a wooden  spoon  until mixture forms a ball; remove from heat.
  2. Add 1 egg to mixture and beat hard with wooden spoon to blend. Add remaining  eggs one at a time, beating well after each addition; each egg must be  completely blended before the next egg is added. While beating dough, its  consistency will change from looking almost curdled to smooth.
  3. When dough is smooth, spoon it into a large resealable plastic storage bag  and, using scissors, snip off one corner of bag, making a 1-inch-wide cut.  Gently squeeze bag to form ten 1″ x 4″ dough logs about 2 inches apart on an  ungreased large rimmed baking sheet. Bake 40 to 45 minutes, until golden and  puffy. Remove to a wire  rack  to cool.     ( I would use my pan I found )…
  4. In a large bowl, beat cream until stiff peaks form. Fold in pudding mix and  set aside. In a small bowl, stir together confectioners’ sugar, cocoa,  and milk to make a smooth icing.
  5. Cut eclair shells horizontally in half and spoon pudding mixture equally  into bottom of each. Replace tops of eclair shells and spread cocoa icing  over tops. Cover loosely and chill at least 1 hour before serving.

Fresh Baked Bread the Easy Way!

My daughter-in-law always serves fresh baked bread  k10328568when we go out to their house to eat…

She had said, “It’s at Wal-Mart in the frozen foods“…k10812190

So, the other day I found it!…

It is made by Rhodes… I believe I had bought some of their dough for rolls k6045401a few years back…

I picked up a package of the bread dough… There are three loaves in a package… and it comes to about $1.25 per loaf…

All you have to do is:

Remove dough from wrapper… (I just took out one… all I was going to bake for us)

Spray a loaf pan with cooking oilk7687870

Put in bread…

Spray bread dough… with cooking oil also…

Cover with plastic wrap

and let sit for about 4-5 hours… (Depending on the heat of your kitchen)OLYMPUS DIGITAL CAMERA

Carefully remove plastic wrap and bake at 350 degrees for 25 minutesk11056943

“Goody” Containers…

After Christmas is actually my favorite time to shop… I don’t do Black Friday … but, I have been known to get up very early for the After Christmas Sales!

I’m kind of particular as to what I buy…

Keeping people in mind…

What I’m going to do with what I buy…

Is it really a bargain

Can I store it for a whole year…

I always bake something… mainly cookies

or I make candy… and even little loaves of breads

So I’m on the outlook for containers

It has to be something I can mail… because my Georgia relatives will be getting homemade goodies from me…and a few neighbors, etc. …

They tell me they love it! … or it could be they haven’t the heart to tell me …

“DON’T SEND COOKIES/CANDY ANYMORE!”…

I will go on believing they like their goodies… as my husband calls them… because I truly enjoy making them.

I collect different containers… to ship in… and also cute plates and boxes

   Ceramic Baking Dishes for breads…

 

Family and Friend’s Plates will work well for Cookies…
