I had received a new crock pot for Christmas and have been wanting to try it out…OLYMPUS DIGITAL CAMERA

This was the opportunity… wanting to try this yummy sounding recipe!…

Cowboy Stew
Ingredients
1 tbsp margarine (butter)
1 lb ground beef (turkey)
1 onion, chopped
4 green onions, chopped (optional)
1/2 cup celery, chopped (optional)
1/4 cup bell pepper, chopped
1/2 clove garlic, minced
Salt and pepper to taste
1 tbsp chili powder
1/4 tsp. sugar
1 #303 can tomatoes (1 can rotel tomatoes)
1 16-oz. can whole kernel yellow corn
1 32-oz. can ranch-style beans
6 medium potatoes, peeled and cubed
3 cups water (or enough to make sauce without scorching)
Directions
* Melt butter in 5-6 quart pot.
* Add ground beef and brown well.
* Add onion, green onions, celery, bell pepper, and garlic; saute with browned meat until soft.
* Add salt, pepper, chili powder, and sugar; stir in well.
* Add rotel tomatoes, corn, beans, cubed potatoes, and water.
* Stir all together and bring to a boil, stirring frequently to keep from scorching.
* Reduce heat and cover.
* Simmer until potatoes are soft (about 30-40 minutes).

I package McCormick Chili Mix, Original flavor
1 small can tomato sauce, unsalted
1 can (16 oz) ranch-style beans
2 medium potatoes, peeled and cubed ( small cubes)
3 cups water ( more, as needed)

Directions
* Melt butter in 5-6 quart pot.
* Add ground beef and brown well.
* Add onion, celery, bell pepper, and garlic; sauté with browned meat until soft.
* Add salt, pepper, chili powder mix, stir in well.
* Add tomato sauce, beans, cubed potatoes, and water.
* Stir all together and bring to a boil, stirring frequently to keep from scorching.
* Reduce heat and cover.

I made the original version… wanting everything in it!…

since I was going to make a big pot!… and figured we would eat on it a couple of days!…

It is a little spicy just hot enough!… szo0041

My guys loved it and so did I!…

More of a soup to me… would be awesome with Corn Bread 11115885 

but we ate it late tonight to taste it… so just had it all by itself… DELICIOUS!

Shepherd’s Pie or Maybe “Humble”?

I’m not a great cook

I’m a person who likes easy… simple recipes…

The quick foods that are out right now that you can prepare from the freezer… a box or a bag“I just love them!”…

Meals in less than 30 minutes…

That’s my kind of cooking

Maybe a few veggies to perk it up…

Quicker the better!…

My newest try today was…

Velveeta Cheesy Casserole Dinner… (from a box)…

This one is called Shepherd’s Pie“…

Yes, I’ve made it before from scratch many moons ago…

But, basically it’s the same thing

Everything is just in this bright yellow box except the ground beefk6159775

You just brown the beef… drain… return to skillet… add seasoning/veggie packet and water… Cook for 1 minute…

I added some corn as one of their suggestions

Put in bottom of casserole dish

Made instant mashed potatoes that came in the box… adding milk and butterMicrowaved for 3 minutes…

Poured Velveeta Cheese on meat first that comes in a packet… Then placed potatoes on top…

Baked in pre-heated 425 degree oven for 20 minutes

It gets all bubbly and the potatoes brown a little…

DONE!…

I cooked!… just in a more simplified way…

and it taste just fine…

I might have to call this “Humble Pie”

instead of “Shepherd’s Pie”… because I humbly apologize to all who don’t use or like these quick meals…

But, I will continue to make them… because that’s the kind of girl I am!

Morning Omelet…

Gift…

I’m laying here with my eyes still closed   … My mind is already starting to put pictures of people and events into my head… I go from one to the other… and when I get wider awake … I decide it’s enough of this!… Everything is starting to twirl around and I need to get fully awake… My eyes open and I know it’s time to get up   …

It seems we have inner alarm clock … I can usually even tell you what time it is within a few minutes…

In my earlier awaking moments… I’ve tried to think of what plans I have… if any… for the day… appointments … calling people… taking someone somewhere… what I’m going to cook…

I’m not as good at waking up as I used to… I know why… I’m retired… and not on any real schedule   … At times this is wonderful!… but, at times I can see having to go somewhere every day… keeps our lives in more order

Every day is somewhat of a surprise… Just going with the flow of what others want to do… what I want to do… What I “need” to do…

So far this morning… I’ve been on the computer  … watched the news   and weather  … had my one cup of coffee… all I want anymore… petting my cat, Jill… walked around my yard looking at my flowers and listening to the animals waking up… feeding the birds  … feeling the grass under my feet… sitting in our swing   under the big oak tree… just being quiet

I had seen that my husband had been up earlier… by the coffee pot being on… and I know he will be getting up for the day soon… He just needed a few more ZZZZZZ’s   …

I decide to fix him an omelet of sorts… I had green pepper… green onions… cherry tomatoes… two different kinds of cheese… and of course eggs… He says, “That sounds good!… with two pieces of toast”… and he always has to have a bite of jelly   …

So this is the result…

Actually pretty yummy!… We shared…

Started with two rings of green pepper… chopped green onions and some chopped ham…

I added a few cherry tomatoes to my side… and poured in two well beaten eggs…

Added some salt/pepper to taste… and swirled egg around edge of skillet…

Time to flip over…Yes…my huhsband wants his eggs “DONE”…

Adding my favorite part of American Cheese and shredded Italian Cheese…

With a lid put on just until cheeses melt…The Omelet is ready…and we ate every bite!
