Banana Pudding… My Way…

Finally got to the store…

with the snow and very cold temperature… k8479852I haven’t wanted to get out…

I almost had to make myself…

Looking for some quick meal ideas… and desserts…

I decided I could make Banana Pudding with the Vanilla Pudding Mix I already had…

Just needed some Graham Crackers and Bananas…

and my guys love it!…

After eating our Deli Lunch of BBQ Pork, Potato Salad and Slaw… with some really good Bakery Rolls  k8281120k15167429

I thought I would make it… and then clean up everything at once…

I fixed the Cooked Type Vanilla Pudding as per directions on package…

I box of pudding with 3 cups of milk k6739905… Stirring until thick…

I bought Cinnamon Sugar Graham Crackers12959822_201307221336 … hoping they would work… because the leftover ones will be eaten with coffee… I know my husband!…

I layered Graham Crackers2-Sliced Bananas k3694684 and then Pudding… 3 times…

I then made Meringue for the top…

I now some people just use Cool-WhipOT384005S … but, I love a Browned Meringue on mine…

Beating 3-Eggs Whites until frothy… add 1/4- Teaspoon of Cream of Tartar

5-Tablespoons of Sugar and 1- teaspoon of Vanilla…

Continue beating on HIGH until Fluffy!…

I just love the way the egg whites become this wonderful fluffy white topping….

Spread on pudding… then brown in hot oven (400 degrees) for about 3 minutes

The guys didn’t even wait for it to cool… They dug right in!…

and evidently it was good… they both had two helpings!…

I will have some later… while watching TV… I’m too full from lunch… and want to enjoy it!…

My son just said, “You better hurry and get some… if you want any… it’s going fast!”…

That’s what I call “a good thing!”

Candy Cane Cups for Thanksgiving

Love getting up early… but, not at 4:30 am…

My right hip has been hurting…

Don’t mention…”How old are you?”…

so… I get up and it actually goes away…

I then… get so sleepy… that I have to return to bed… and get up later than I like

I hate wasting time except when doing something fun!… and then I just don’t care…

After breakfast… I made a pot of chiliszo0041

to have whenever anyone wants it… because I had some things I wanted to do…

One… was to get one of my desserts made for taking to my son/daughter-in-laws house for Thanksgivingk4982551

I found this mix and it says Holiday for sure…

and tweaking a recipe on the side of the box it became mine…

and simple like me!…

Beating Cool-Whip and Dark Chocolate Pieces together… (after melting)… for the topping…

It was suggested for the “pie” recipe on the box but…

I thought I would add it to the “Frozen  Candy Cane Cups” recipe…

that was on the box too…

Add melted margarine / butter to the crumbs…

 which happen to be “OREO” crumbs…

I press down the crumbs with a glass… so easy…

and you know I like that!

then turns pink… when mixed with milk…

and the smell of Peppermint (candy cane)  radiates from it…

Christmas Tree Bread

I made two low-fat low-calorie foods for my TOPS group Christmas Get-together tonight…

One is a low-calorie Crustless Pumpkin Pie… It is almost like eating pumpkin custard… Fine with me… because I’m more interested in the “filling” than the crust… I know!… You “crust” people will totally hate it… well not maybe… After you taste it… you will be quite impressed…

Crustless Pumpkin Pie (Low-Calorie)

Ingredient

  • 1 (15 ounce) can pumpkin
  • 1 (12 ounce) cans evaporated skim milk
  • 3/4 cup egg substitute
  • 1/2 teaspoon salt
  • 1 -2 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla
  • 2/3 cup Splenda sugar substitute

Directions

  1. Combine all ingredients and beat until smooth.
  2. Pour into 9-inch pie pan sprayed with cooking spray.
  3. Bake at 400 degrees F for 15 minutes; reduce temperature to 325 degrees F and bake for 45 minutes more.
  4. Pie is done when knife inserted into center comes out clean.

Of course I’m taking low-fat Cool Whip to put on top… Yummy!

My other recipe came from Pillsbury Bread Christmas Trees…

Of course I altered it a little… That’s just me… I couldn’t find the Bread Stick Dough… so I picked up the One Sheet Dough and cut it in strips…Then formed the little “dough” trees with a trunk…Turned out so cute… and quite easy… Great for a Christmas party !…
