Cabbage and Mashed Potatoes

A fellow blogger was talking about how a song or a piece of music made her think of certain people

It happens to me when I’m cooking sometimes…

like today…

Cabbage just cut in wedges… boiled with a little water… salt/pepper… a little sugar and butter184732

I cook until tender not stirring much… because I like the wedges of the cabbage to remain whole

Baked potatoes with salt/pepper and I admit a lot of butter!…

Nothing else… it was the midday meal… and I couldn’t have eaten anything that tasted better…

Every time I start to cook cabbage a memory of a friend’s Mother comes to the surface…

I would be visiting and that simmering cabbage and big bowl of homemade mashed potatoes k4508598would be set on the table… sometimes cornbread baked in an iron skillet… k5650848

We dipped right out of the pan that the cabbage had been cooked in… 178320

and didn’t realize that’s probably all there was to eat…

Maybe that’s why… what I cooked today… tasted so wonderful…

It wasn’t the food… it was the good memory… k11242244

Today it’s rainy and I got back from water aerobics early… It had been cancelled due to thunderstorms in area… No swimming in pool when weather has thunder/lightning…

So I decided to cook some warming food

I only added salt/pepper… butter… a little sugar… and water…

I also thought I would go meatless… So instead… I made baked beans the easy way in my Green Skillet…

Canned KC Masterpiece Baked Beans ( *Original* Sweet Molasses and Hickory Smoke) with my addition of sautéed red pepper and onion… mustard/ketchup and a little brown sugar…

If I had some cornbread it would be complete… but no cornmeal or even a box of Jiffy Mix… Oh, well… it will still be good!… I’m hungry!

Shepherd’s Pie or Maybe “Humble”?

I’m not a great cook

I’m a person who likes easy… simple recipes…

The quick foods that are out right now that you can prepare from the freezer… a box or a bag“I just love them!”…

Meals in less than 30 minutes…

That’s my kind of cooking

Velveeta Cheesy Casserole Dinner… (from a box)…

This one is called Shepherd’s Pie“…

Yes, I’ve made it before from scratch many moons ago…

But, basically it’s the same thing

Everything is just in this bright yellow box except the ground beefk6159775

You just brown the beef… drain… return to skillet… add seasoning/veggie packet and water… Cook for 1 minute…

Put in bottom of casserole dish

Made instant mashed potatoes that came in the box… adding milk and butterMicrowaved for 3 minutes…

Poured Velveeta Cheese on meat first that comes in a packet… Then placed potatoes on top…

Baked in pre-heated 425 degree oven for 20 minutes

It gets all bubbly and the potatoes brown a little…

DONE!…

I cooked!… just in a more simplified way…

and it taste just fine…

I might have to call this “Humble Pie”

instead of “Shepherd’s Pie”… because I humbly apologize to all who don’t use or like these quick meals…

But, I will continue to make them… because that’s the kind of girl I am!

“A Different Kind of House Plant”

A Gift…

I can’t believe my first blog of the New year is about a Sweet Potato Vine … I’ve been growing it for about two weeks… I’ve always wanted to try it… and I can’t believe how easy it was to get started… I love watching things grow and since the “Sweet  Potato Vine” is a relative of my favorite flower, the Morning Glory … it was just meant to happen!… I also like things I can do quickly… I want to see progressive advancement… When I paint … I can usually complete an item in one day…or at least see results… which keeps me motivated… So this plant is ideal for my way of thinking!… It is visually appealing… fast growing… and will have an abundance of leaves and vines.

Growing Sweet Potatoes in Water…

Things You’ll Need…
Sweet potato – 
Glass jar – 
Toothpicks – 
Water – 

Instructions:

Stick three to four toothpicks into the sweet potato. For young children, an adult can stick the toothpicks in.

Insert the sweet potato into the glass jar. The toothpicks will hold the potato a few inches away from the bottom of the jar.

Add enough water to the jar so the bottom of the potato sits fully in the water.

Place the jar in the window sill or a place where it will get lots of sunshine.

Check the jar daily, adding water when needed to keep the potato bottom wet. Soon you will see sprouts forming on the bottom of the potato. These sprouts show roots beginning to emerge. In a week, you will see small leaves growing from the top.

Keep the water level the same in the jar, so the sweet potato bottom stays wet. A few days after you see the first leaves, you will see vines growing. After two to three weeks, you will have several long vines with green leaves. You can continue watering your potato as usual in the jar or transplant it into a pot with soil . Your sweet potato will continue growing into a green, leafy houseplant.

“Meatless Meals…So Good!”

No meat tonight for dinner… We’ll get enough protein from the Field Peas and Snaps … What are “snaps”?… They are immature pea pods cooked with the peas…If you like Black-eyed peas I’m sure like Field Peas… It started with me cooking green cabbage/potatoes … of course when I cook cabbage I think of a friend’s mother…When I spent the night she would cook cabbage and potatoes… I don’t remember meat being served then either… but, I do know… there was that big pot steaming with that wonderful combination… Along side was a skillet of cornbread  with butter…No need for anything else!… I’m making fried apples too…mainly because I need to use the apples, but it sounded so good together…Lots of butter/margarine, sugar, cinnamon and a little nutmeg … Yummy!… I could be an announcer for a cooking show!… I also cook my cabbage with butter/margarine, salt/pepper and about a tablespoonful of sugar…The sugar in most vegetables just enhances the flavor I have found…and spread out throughout the whole pot or skillet, not that many calories… Of course I know bacon grease  was used by my Mom and my friend’s Mom for seasoning… but, things change as we gain our own way of cooking… I’d better check the progress… it’s smelling so good!  …Try a meatless meal sometime… You will truly enjoy it!  

“My Kids”…

No wonder some of our kids didn’t eat very much at school…unless it was pizza… Papa John Pizza Day on Tuesdays especially… Schools serve some kind of meat we usually called “Mystery Meat”… because it all tasted the same, although it was served as chicken , beef or pork …Looked pretty much the same too … Of course if you put ketchup, mustard or hot sauce on it…it tasted the same anyway…which is what they usually did… My Granddaughter and Grandson have cheese and crackers as an alternative to the regular meal and so did our kids… Could it be this meatless meal   looks and tastes better than the other choices offered … No doubt!
