Strawberry Jam…Yes!…It’s Easy and Good!

Fresh Strawberries… Topped of greenery and stemmed…

I had already purchased this magic product… that thickens the jam…

I had been saving these small Pimento Jars…

thinking this was a good size for a week or two of jam spreading on toast or biscuits…

I boiled them after washing them… to make sure they were sanitized…

You crush the strawberries 2 cups of crushed berries is recommended!…

Add four cups of sugar letting sit for 10 minutes…

stirring every now and then…

Infiltrate the sugar into the crushed berries…

until a syrupy consistency

Cook pectin with water recommended on package…

for 1 minute while boiling and stirring constantly…

Then add to strawberries/sugar… Stir for 3 minutes…

until sugar is dissolved…

Pour into clean jars and put on lids tight…

Let set for 24 hours… then can be refrigerated for a month or frozen for a year…

Day# 1 Christmas Baking Has Begun!

I know I have to get started on my baking, candy making… to get it in the mail!…

Every year I get a list together of a few new items to make… and some old reliables…

My relatives in Georgia are my guinea pigs… (Bobby’s three sisters and families…) trying out my recipes… a tradition I started many years ago…

Last night I mixed up my batter for Cherry Chewy Cookies”... a recipe I saved from “Can’t Stay Out Of the Kitchen”…

Cream everything but, flour, cherries, pecans and coconut…

Fold in these ingredients next…

Place rolled balls onto baking sheets covered with parchment paper…

Bake 375 degrees for 12-13 minutes…

I added 1/2 of a candied cherry to top…

This recipe made 5-1/2 dozen cookies

INGREDIENTS:

1- cup brown sugar

3/4- cup butter

1- egg

2-tbsp. milk

1-tsp. vanilla

2- cups all-purpose flour

1/2- tsp. salt

1/2- tsp. baking soda

1- cup quartered candied cherries

1- cup chopped pecans

1- cup coconut

and then an old recipe I have made off and on for over 40 years“I can’t even believe that!”…

“Candied Strawberries”...

My Dad brought home this recipe for me to make…

He wanted to give them as gifts…

He bought all of the ingredients…

I was married with two young boys… and loved doing for Christmas anyway!…

I made so many of these… I couldn’t look at a strawberry for a year I know!…

I found a copy of this recipe on Cooks.com…

Mix all ingredients in a big bowl… Best to refrigerate at least an hour or overnight…

Shape into strawberry shape… just play with it…not that hard and doesn’t have to be perfect…

I like placing them in small muffin tin papers…

Decorate a green leaf on top with canned green frosting…

can be frozen… until ready to serve… Keep refrigerated…

Just a few on a cookie tray adds some color…

I doubled batch to make 5-1/2 dozen…

INGREDIENTS

1-cup coconut

2- pkg. (3oz. size) Strawberry Dry Jello

3/4 – cup sweetened condensed milk

1- cup ground almonds…

1/2- tsp. vanilla

Roll in extra dry jello

Boil sugar, butter, heavy cream (half/half) and salt for 5 minutes… stirring often…

remove from heat and stir about 5 minutes…

Add powdered sugar, vanilla and chopped red and green candied cherries… folding in…

Pour into 8″ X 8′ pan…

Cool and cut into small squares…

Store in air tight container

I’m hoping to get 25 pieces ( 2-dozen) + 1 … from this pan…

INGREDIENTS 

1-cup sugar

1/2- cup butter

1/2- cup heavy cream

1/8 tsp. salt

2- cups powdered sugar

1-tsp. vanilla

1/2- cup red candied cherries( chopped)

1/2- cup green candied cherries chopped

All of these are quite easy… very tasty… and will be fun to make!

I had made Strawberry about a month ago… Have

Fresh Blueberries… about 2 to 2-1/2 pints

Washed …

5 to 5-1/2 cups Sugar and I packet of Sure-Jell

Add sugar to berries… stir till to sugar is dissolved…

Boil packet of pectin with 3/4 cup water for 1 minute…

add to berries and stir for 3 minutes…

Put in clean jars… I had saved these… why buy… when you already have these cute jars from other items…

This recipe made 5 jars exactly… just enough to get out of freezer and enjoy!

Can’t wait to taste!

Have to let sit for 24 hours before refrigerating (Will last a couple of weeks)… or freeze for up to a year!

My word for the year is “Simple”… chosen on January 1, 2013…

I loved the idea of just choosing a word to get you through the year!…

and this recipe fits in perfectly!

Go Away Gnats!

My sister asked , “How do I get rid of gnats?”…

I remembered a recipe I had saved from Food.com…

An easy recipe… and since I had noticed a few myself…

I made one… Only took a couple of minutes…

Now, to see if it does the trick!

Directions:

1. Pour apple cider vinegar and drop of dish soap into glass or jar.

2. With the paper, make a cone with a 3/4-1″ hole on the bottom. The cone should sit on the glass rim without the tip touching the vinegar. You may have to squeeze-shape the cone a bit to prevent gaps between the paper and rim.

3. Every day or two, switch out the vinegar. (You’ll see when it stops being as potent. The flies/gnats will stop going

Zucchini for One or Two… If You Like It!

Today I wanted to write about something fun… easy and yummy!…

I’m trying to eat more fresh veggies and fruit…

That’s to be seen of course… but, I think I might have the mindset to do it!

I bought some zucchini… or as I learned from a fellow blogger “My Beautiful Things”… Courgette

knowing my guys aren’t going to eat it… but, I wanted to try a new recipe I had seen… and it sounded like something “I” would eat and enjoy…

Being a “simple” person… and liking things easy to prepare… I winged it…

INGREDIENTS…

Since I would be the only one eating it… I bought 2 small/medium size zucchini

1- package Vegetable Rice Medley Mix (Knorr) brand… OLYMPUS DIGITAL CAMERA

I had some shredded cheese… only took about 1-cup… OLYMPUS DIGITAL CAMERA

Salt/pepper/ and a shake of some mixed seasoning I had…

So… here is my version of …

“Rice Stuffed Zucchini”

I microwaved zucchini for about 4-5 minutes until soft…

Scooped out insides leaving a well to stuff…

I saved the zucchini that I had scooped out… added some chopped onion and sautéed in butter until tender…k3930734BED0015

After cooking rice per directions on package (water and butter)… boil…OLYMPUS DIGITAL CAMERA

I added sautéed zucchini and onion

and spooned into shells of zucchini…

Sprinkled shredded cheese on top… and baked for about 20 minutes at 350 degrees……

Why I didn’t take photo after baking… is beyond me…

Well, maybe I was just so pleased at how they looked… I forgot… and couldn’t wait to taste!…

Healthy… easy and my complete meal… (Actually two servings)…

2 Ingredient Fudge… Delicious!

This is probably the easiest recipe I have ever made…

I didn’t have a thingsweet in the house…

You know those kind of days…

So cold… didn’t want to go out…

Somewhere in the back of my mind I remembered a recipe for making fudge out of Canned Frosting

I looked it up and sure enough… there it was!…

and it only called for one other ingredient… chocolate chips… which I knew I had some left from Christmas in the refrigerator

You can read the recipe that takes all of 5 minutes to make and then chill for about 10-15 more minutes until you can cut in little squares…

It is so delicious… and SO EASY!…

I used…

About This Recipe

“A family friend makes this for all types of church get-togethers. I ate some when mom brought it home and I could not believe how simple this is to put together.”

Ingredients

  • 1 (12 ounce) cans of ready to spread frosting, any flavor
  • 1 (12 ounce) packages chocolate chips, any flavor ( ie. chocolate chips)

Directions

  1. Make sure you have complimentary flavors.
  2. Melt the chips in a microwave safe bowl, stirring every 30 seconds until smooth.
  3. Melt frosting until pourable, about 30 seconds.
  4. Mix together the chips and frosting and pour into a greased 8×8 pan.
  5. Chill until set, about an hour.
  6. Makes a very soft, smooth fudge.
  7. Do not use the toffee chips, as they don’t melt very well.

Strawberry Candies

Way back when my boys were young… and we were living in our first home… I made these candies… I have no idea where I got the recipe… Could have been a magazine… a cookbook… the side of the coconut bag OLYMPUS DIGITAL CAMERA… the side of the strawberry jello boxOLYMPUS DIGITAL CAMERA …I really can not remember… I do know it wasn’t on the internet… because there was no internet…although I did find the recipe I used tonight on COOKS.COM Recipe Search…

There it was… just as I remembered… same ingredients and instructions…

I made many a batch that Christmask7667619 … My Dad even had me making them… for him to give as little gifts at his work…

They are kind of pretty with their sugary redness… and bright green stems…

I’m going to use them as accents to my cookie trays I’m making…

The ingredients are simple… and you just free-form the shape into a strawberry with your hands/fingers… and then add a green frosting stem… Some recipes call for an almond dyed green to be used for a stem…but, I always liked the piped on leaves… Just my preference…

Recipe as follows:

Candied Strawberries

1- cup flake coconut

1- pkg. ( 3 oz. Strawberry Jello ) It called for 2 packages… but, one is sufficient!… Use DRY!

I used the other package to roll the candies in as I shaped them…

3/4 cup sweetened condensed mild

1 small package ( 2 oz. ) of almond slivers ( 1 cup ) … I ground them into small pieces… 

1/2 teaspoon vanilla

The recipe also called for candied red sugar… this is where I used the other package of jello…

Mix all of the ingredients together… Chill for at least one hour… Shape into strawberry shapes… rolling in extra dry jello… Add frosting leaves on top… and then put in freezer until time to serve… Makes 30…

SO pretty… SO tasty!

I lay them on parchment paper or waxed paper… covering a cookie sheet

“Goody” Containers…

After Christmas is actually my favorite time to shop… I don’t do Black Friday … but, I have been known to get up very early for the After Christmas Sales!

I’m kind of particular as to what I buy…

Keeping people in mind…

What I’m going to do with what I buy…

Is it really a bargain

Can I store it for a whole year…

I always bake something… mainly cookies

or I make candy… and even little loaves of breads

So I’m on the outlook for containers

It has to be something I can mail… because my Georgia relatives will be getting homemade goodies from me…and a few neighbors, etc. …

They tell me they love it! … or it could be they haven’t the heart to tell me …

“DON’T SEND COOKIES/CANDY ANYMORE!”…

I will go on believing they like their goodies… as my husband calls them… because I truly enjoy making them.

I collect different containers… to ship in… and also cute plates and boxes

   Ceramic Baking Dishes for breads…

 

Family and Friend’s Plates will work well for Cookies…

None of these items cost me over 50 cents… So that way… I can put more into the ingredients I will need…

Magic Chili… A Time Saver!

It’s the Holiday Season … and everyone is rushing around shoppingCooking becomes a fast food burger, pizza or something else that is quick… and be gotten from a drive-thru

Here’s my simple… and I do mean simple… Chili Recipe… Sorry… not anything handed down from my Mom… Not something my husband has made for years…

Just a quick way to make a good chili… add a grilled cheese … and supper is done…

Ingredients:

1-lb. ground beef… browned in a skillet with 1/3 chopped onion

Add…

1- can Bush’s Chili Magic- chili starter

1-can Chili Ready Tomatoes

A little salt/pepper to taste

(Spaghetti Optional) I make it and let my guys choose if they want it or not…

Ready as soon as all ingredients are combined and hot… Takes about 20-25 minutes…

and it taste good!

“Yummy Pimento Cheese!”

Memory…

Silly me! I began to make Pimento Cheese … It’s a recipe from a teacher I used to work with … His wife was always making something fabulous for us to try… We would sit in the lunchroom cafeteria and enjoy the neat snacks he would bring… This recipe has been passed on to many people who have fallen in love with this tasty spread… I thought I had everything to make it… but, I had forgotten that I had used the green onions  in a salad the day before… so a trip to the grocery had to be made… I was going anyway… so no great bother… When I returned… I got the ingredients out and started to mix everything together So easy… because all is prepared except for slicing the green onions very fine… including some of the green stems…

1- Package shredded fine cheese… I prefer the mixed cheese like for pizza 

1- Package of real bacon bits …”real” I say!

1/2 of a bunch of green onions… sliced really thin like I mentioned

1 – Teaspoon of cayenne (red) pepper… or suit your taste

Enough real mayonnaise to make it spreadable… maybe 3/4 of a cup… and I do prefer “real” mayonnaise

I mixed all of this together… seemed a little dry… but, oh well… I added a little more mayonnaise

Put it in my pretty clear glass dish … that I bought at the thrift store one day… and thought… “Well, that’s done!”…

I was putting everything away when my son says, “Mom, are you going to put pimentos in this?”… Well, yes!… but, as I looked at it I hadn’t… they were still in the pantry  … where I had bought the jar over a week ago… So, “Silly Me” added the pimentos... making it less dry of course…and so much prettier… I laughed as I told my husband, “Pimento Cheese has to have pimentos in it doesn’t it?”… He looked at me and said, “Yesss…” not knowing what I had done… I called myself “silly” and he totally agreed after my explanation… So to the list above… don’t forget like I did… add one jar of chopped pimentos to the recipe… It helps!”
