Christmas Party Fun!

Last night there was a Christmas Party  u11216554 with my TOPS friends(Take Off Pounds Sensibly)…

We went out one year to eat and then the last three years we have opted to have our get-together at the meeting room where we meet each week…

It is so much more fun!…

There is meat and bread provided… along with drinks/ice…

( this time we had lean pulled pork and chicken ) with BBQ saucefrom Mark’s Feed Store…

We all sign up to bring lower calorie dishes

We are all pretty good cooksu11777124 … or we wouldn’t need the club to help us stay on track of our weight or encouragement to lose those extra pounds...

Menu last night included…

green beans, glazed carrots, salad, jello salads, carrot salad, fruit, couple of different potato dishes, turkey/ dressing (after all), frito corn salad, veggie pizza appetizer, deviled eggs, broccoli casserole and a few desserts…

Ruthie’s Pimento Cheese

I made it again today!

Have you ever cooked or baked something and you just didn’t get enough of it?

and my Pimento Cheese

The recipe for the pimento cheese is from a wife of a friend I used to work with…

An excellent cook!

but, when he brought us this cheese spread and crackers for lunch… we gobbled it up!

I call it “Ruthie’s Pimento Cheese”…

Ingredients: OLYMPUS DIGITAL CAMERA

1 – package Shredded Sharp Cheese

I – jar choppped Pimentos with liquid

1/2 package of Real Bacon Bits

6 – green onions chopped with some of the green

1/2 teaspoon red pepper (cayenne) or to taste… longer it sits… will get hotter

Mayonnaise to bring it all together (spreadable)

Apples Everywhere!

Every time I go to the store I see apples… every kind you can think of…

Piled high… in colors of red… yellow and green1574R-016238

My favorite is a Gala… they are “just right” for my taste buds…

There are a lot of recipes going around that require apples…

One being… wrapping a piece of a cored apple in croissant dough with cinnamon / sugar and baking…

easy enough… and has to be good!

I wanted Apple Salad or Waldorf Salad as we always called it…

Apples … I used my favorite Galascored and then chopped…

Celery … chopped… I love the inner tender stalks for salads…

Raisins … any kind you like… You can even use dried cranberries

Nuts ( I used pecans because that is what I had )

Mayonnaise or Salad Dressing like Miracle Whip

Again… I had mayonnaise…

added a little Apple Juice, Apple Cider Vinegar ( this keeps apples from turning brown) and a little sugar… ( lemon juice also works to keep apples from turning )

Mixed all together…

Put in my favorite “Cherry Bowl”… after sharing some with a neighbor…

It was just what I wanted!

Learning Every Day!… Crab Salad!

OK… I admit it!…

Made a grave mistake…

I wanted some crab salad… and if you know me… it has to be EASY!…

I made mine using the ingredients I use in Tuna SaladWRONG!…

It was edible… but, not what I had in mind and definitely not the taste I was wanting…

Live and Learn…

and I have learned!…

Something kept telling me “NO PICKLES”…

This is what I did…

Easy Crabmeat from Bumble Bee… that was great!

Not good!

Minced Onion would be OK that I used… but, better “Spring Onion”

Mix and chill… then eat…

Tolerable… but, as I said… not what I wanted…

It was “just right”…

I see our family staying close… loving each other… and making that “effort” that it takes to come to events like this…

Recipe for Brown Sugar/Bacon Wrapped Sausages…

Ingredients OLYMPUS DIGITAL CAMERA

Smoked Little Sausages… (I used 3 packages)

Brown Sugar … about 2 cups

Bacon… about 2 lbs. ( each slice cut into 3rds)

Directions

Wrap each sausage in 1/3 slice of bacon… and roll in brown sugar… can secure with wooden toothpick or just lay seam down… (this is what i did) on a cookie sheet…

Sprinkle remaining brown sugar on top…

Bake 375 degrees until bacon starts to brown… and crisp… approximately 20-25 minutes…

I drained grease off and sprinkled a little more sugar on them… then put under broiler till browner and crisper…

After cooling I just put in a baking dish to serve… some bacon might fall off…

That’s OK!… we are not perfect!…

YUMMY!…. and they were all gone!

Things Have Changed… But… We still Have Our Freedom!

Memory…

We always celebrated the 4th of July  by a picnic … later it became cookouts… We would pack a real wicker picnic basket with tasty homemade food… like fried chicken… macaroni salad… sliced tomatoes… baked beans… maybe some potato chips… and soft drinks put on ice in a big metal tub… cookies or a cake that was baked in the pan where it could be easily transported …later the menu became grilled hot dogs… hamburgerspotato salad… baked beans… some kind of pasta salad… chips/dip… slaw… and whatever new dessert someone wants to try…

A Celebration cake to add to our festivities…

ice in a cooler and 2 liter soft drinks and “red solo cups” … A blanket or two thrown in for sitting on the grass … this was extra seating besides the wooden picnic tables found at every park and even along the roads at pullover points… Now we have a couple of those umbrella type chairs that we keep in the trunk in case we need them… that unfold and even have cup holders built-in… We had concrete porches  and yards to sit in… and now everyone has a deck… made of treated lumber… with umbrella tables and chairs  in bright colors… Pools were at High Schools or parks and now are in most backyards…

Things have changed… but, really not that much… and it seems even our younger generation knows why we celebrate Independence Day…or the 4th of July…

My grandson made a poster to decorate for the “cookout” and swim party his parents were having…

His idea… and my collaborationFireworks were bought with the knowledge that if it was too dry… they would be put on hold for another time… “That’s OK”, he said… with a wishful hope in his voice that they could be lit to brighten the sky when dark came… Goodies were fixed to take… the pool was ready… friends and family had been invited and many were coming…

Wickett…the grandkids puppy …sitting in my lap…

even the pets  were getting in on the action…Of course my poor baby… my cat, Jill… just runs and hides as soon as the fireworks … start popping… Too much for her!…

Don’t you love the Parrot made out of a tire…

We talk…we swim… we “oo and aah “over the little ones in the pool… we eat and drink… commenting on how everything tastes so good… We fight a few flys that are hungry and thirsty too it seems… we bask in the sun… and then later head for the air conditioning of the house where we used to just find a shady spot under a tree…

I hear a young man thanking my husband for his service in the military when he finds out he was in Vietnam… I thought that was such a nice gesture… and was a fitting way to end our 4th of July celebration…

My oldest Granddaughter squinting because sun is so bright and she always smiles so big…

Young and old mingled together and thankful for the freedom  of having a get together with friends and family… Hope you had a good one too!
