Sunday Cooking!

A lazy day for me…

a busy day for Bobby…

He is finishing the electrical work for the washer/dryer he’s putting in for me…

I thank God for him every day!… with his many talents…

plumbing, electric, woodworking, painting, lawn care, roofing, cleaning house, auto repair, laying tile, furnace repair, concrete work…

He has touched everything in our home…

I can do many things too… since I have watched him and before that my Daddy and Mom…

You will find me today cleaning house and cooking…

Vegetable Soup was on the menu… I had found a sale on canned veggies… so SOUP they became…

Vegetables drained half way…

Small chopped onion…(had)

Beef stew mix (I already had)…

1-Pound Ground Beef cooked…(had)

3-cups water

Combine in crock pot and cook 4 hours… add salt/pepper to taste…

I also had been wanting to make some Bean Salad for myself…

I will be the ONLY one to eat it…

but, that’s OK… it will be my snack and lunch for a couple of days… and I will be happy!…

I used…

1- can Black Beans (drained and rinsed well)…( I had them… so used them!)

1- can Dark Red Kidney Beans (drained and rinsed well)…

1/4 of a medium sweet onion chopped…

4- 6″ pieces of celery sliced thin…

I sliced the sweet midget pickles I had left in a jar… about 12…

Mayonnaise to combine and give the taste you want…

I boiled 2- hard-boiled eggs, sliced and added after they had cooled…

And SIMPLE PEACH COBBLER!…

1/2- cup melted margarine (butter) in bottom of 8″ X 6-1/2″ glass baking dish…

Combine:

1-cup sugar

1-cup baking mix or  self-rising flour)…

1-cup milk

Pour in bottom buttered dish… and then pour a 15oz. can of peaches with juice over that…

I sprinkled a bit of cinnamon on the top…

and baked for about 40 minutes…

or until brown as you like…

Sister coming over to visit… so will taste soon!

Tuna Sandwich and Vegetable Soup Please…

Memory…

When my sister and I were younger we could have lived on tuna fish sandwiches  and vegetable soup … It’s all we ever ordered on a vacation we took to New York  one time… Every time we stopped at a restaurant we would first look at the menu and then ask, “Do you have tuna and vegetable soup?”… and most of the time they did!… I believe our parents got a little frustrated with our continual choice of food… but, we were happy  

So guess what I will be having today???…

I started with some good lean stew meat for my base… browning it in a little oil

Browned with onion in a little oil…

… then adding some chopped onion… and topping it off with some Lipton Onion/Beef soup mix… and enough water to cover the meat… Adds great flavor for a beefy tasting soup…

Onion soup mix added and simmered…

I let this cook down… letting the meat get tender… before adding… one can of petite diced tomatoes… My guys like tomatoes… but, we all prefer smaller pieces in our soup… a small can of tomato sauce to add a little more tomato flavor… Cooking a little longer at a low simmer…

Tomatoes and sauce added…simmered again…

And then finally adding a package of frozen vegetables combined just for Vegetable Soup… The package contains… Tomatoes, potatoes, corn, carrots, small butter beans, okra, onion and celery… So complete and just enough for a good size pot of soup… Salt/Pepper to taste…

 Frozen Vegetables added and cooked till meat is tender and vegetables hot… 

Tuna fixings  are in the cabinet and fridge… won’t take a minute to put together… So supper will be ready when anyone wants to eat… Summertime

is about eating when YOU want…

because we are so busy… having fun outside… shopping…. visiting and running errands… None of us on the same schedule…
